Maca Mucuna Energy Bites

Lighter on the sugar, higher in the good fats, and spiked with mood boosters. These bites are great to have as an energizing snack before a hard workout or when you just need a little help when that 4pm fog hits. 

Ingredients: 
¼ cup almond flour
¾ cup ground oats
¾ cup puffed rice
¼ cup pumpkin seeds
½ cup unsweetened dried coconut
¼ cup almonds
¼ cup cashews
2 tbs coconut butter
2 tbs almond butter
¼ cup coconut oil
2-4 pitted dates (depending on size and preferred sweetness)
3 tbs maple syrup
¼ tsp salt
¼-½ cup dairy free chocolate chunks
1 tbs maca powder (mild non-jittery energy booster)*
2 tsp mucuna pruriens powder (for that good mood happy boost)*

Place all ingredients besides the chocolate chunks in a food processor, blend on high until you've created a smooth dough (few minutes), place dough in a large bowl and mix in your chocolate, rolls into tablespoon sized balls, keep in your fridge or freezer!

Note: If you don’t have or don’t want to use the adaptogens maca and mucuna pruriens, you can simply omit*
