Walnut Fig Muffins with Crumble

Recipe: Prep time: 10 min. Bake time: 20-28 min.

Dry ingredients:
½  cup millet flour
¼ cup chestnut flour
⅓ white rice flour
⅓ cup Thai white rice flour
3 tbs almond flour
3 tbs ground flaxseed
½ tsp ground chia seed
1½ tbs potato starch
1 tsp baking soda
2 tsp cinnamon
¼ tsp sea salt

Wet Ingredients:
¾ cup applesauce
2 eggs
½ cup dairy free milk (coconut, almond, rice etc.)
¼-½ cup maple syrup (depending on sugar preference)
2 TBS. coconut oil
1½ tsp vanilla extract

Mix ins:
½ cup walnuts
4 large dried figs chopped into small pieces

"Crumble" topping:
1 tbs coconut sugar
1 tbs finely chopped walnut
½ tsp flaxmeal
½ tsp flaxseeds
Pinch of cinnamon 

Method:
1. Set oven to 350 degrees F. and prepare muffin baking tin with paper liners
2. Blend all dry ingredients together in a large bowl
3. Mix the "crumble" ingredients together in a small bowl and set aside
4. Whisk together the wet ingredients in a separate bowl
5. Combine the wet ingredients with the dry ingredients and mix until just combined, while also adding in the walnuts and figs (best to not over mix)
6. Spoon muffin mixture into prepared muffin baking tin with paper liners
7. Sprinkle each muffin with "crumble"
Bake for 20-28 minutes (depending on muffin size)
