Apple Cinnamon Buckwheat Donuts with Lucuma "Caramel"

My friend recently sent me a photo of the most delicious looking Apple Cider Buckwheat Donuts by Du's Donuts and she asked if I could make a healthier version. After looking at the picture and brainstorming about the flour blend that I wanted to use, I created this recipe as a healthy version of the indulgent treat that she sent me. Instead of your classic caramel icing that is made of cane sugar, I opted for a blend of brown rice syrup, date, and lucuma! I hope you enjoy!

Donut Ingredients:
½ cup almond flour
¼ cup buckwheat flour
¼ cup millet flour
¼ cup oat flour
¼ teaspoon ground chia
2 tsp cinnamon
4 tbs maple syrup
½ tsp vanilla extract
1 tsp apple cider vinegar
2-3 tbs coconut oil
2 large eggs (separated whites)
¾  cup unsweetened applesauce OR ½ cup of apple cider

Lucuma “Caramel” Icing Ingredients:
2-3 ounces cacao butter
½ cup coconut cream (only the solid white part that separates from the water)
3 tbs brown rice syrup
2 pitted dates
2 TBS lucuma powder
Pinch salt
For topping: ¼ cup finely chopped walnuts

Method:
1. Set oven to 350°F
2. Prepare a donut pan by greasing the molds with some coconut oil
3. Mix all of the dry ingredients together in a large bowl until fully combined
4. In a separate bowl whisk together the wet ingredients except the egg whites
5. Mix the wet and dry ingredients and set aside
6. Using an electric mixer (easiest way), whisk the egg whites into stiff peaks and then fold them into the batter mixture
7. Pour the donut batter into the prepared donut pan
8. Bake for 12-15 minutes until bouncy to the touch and remove from oven
9. Let the donuts completely cool before you ice them and add the topping
10. Lastly place the iced donuts into the refrigerator to allow the caramel icing to set!

*For the Lucuma “Caramel”
1. Using a double boiler (or makeshift double boiler), add in your cacao butter, brown rice syrup, vanilla, and lucuma - warm and stir until they are mix and silky smooth
2. Let the mixture cool a bit and then pour into a blender - add in your dates, coconut cream, and salt and blend on high until you reach a creamy icing consistency
3. Pour into a bowl and let cool for at least 20 minutes
