Cacao Truffle Power Bombs

These truffle power bombs are packed with healthy fats, protein and are moderately low in sugar. While I love the energizing boost you get from coconut, I've always found a large amount of it to be a bit difficult to digest. I combined a bunch of different nuts, seeds, and protein to create this snack/treat that will leave you feeling energized instead of weighed down. 

Makes about 18 small rounded truffle bombs
Ingredients:
¼ cup dates (pureed to make a paste)
½ cup unsweetened shredded coconut or 30 grams of coconut butter
¼ cup almond butter (any nut butter should work)
½  cup cashew
3 tbs of preferred seed (pumpkin, sunflower, hemp etc.)
2 tbs melted cacao butter (or melted unsweetened chocolate)
1 cup raw cacao powder (the better the quality, the better tasting truffle)
2 tsp vanilla
¼ tsp pink himalayan salt
1 scoop preferred vegan  protein powder (Livwell is my favorite)
1 tsp cordyceps*

1 scoop collagen peptides*

Method:
1. Prepare a baking sheet lined with parchment paper
2. Make a paste out of dates in a high speed blender (sometimes if they are dry adding a touch of warm water to help make them blend easier into a thick paste)
3. Combine all ingredients into a food processor and mix until smooth
4. Roll the mixture into little balls with the palms of your hands and place on the prepared baking sheet
5. Top each with cacao nibs


Note: If you don’t have or don’t want to use the adaptogen/ collagen you can simply omit*

**Quick Fix: If your balls are not rolling easily try adding a touch of non dairy milk or maple syrup to moisten the dough
